Solution:

We have, $1000\, kg$ of watermelon in which $99 \%$ are water.
$\therefore 990 \,kg$ water and $10 \,kg$ rest.
Now, $x$ kg watermelon has
$=\frac{98}{100} x$ water $+\frac{2 x}{100}$ rest
Weight of solid part should remain same
$\therefore \frac{2 x}{100}=10 \Rightarrow x=500$
$\therefore$ Weight reduction $=(1000-500) kg$
$=500\, kg$
