The yeast causes anaerobic respiration (fermentation). In the fermentation the pyruvate is broken down to form ethyl alcohol $ ({{C}_{2}}{{H}_{5}}OH),C{{O}_{2}} $ and $ NA{{D}^{+}} $ The ethyl alcohol is excreted.
