Lactic acid bacteria are gram-positive with low GC content. They are acid-tolerant, nonsporulating, cocci or rod-shaped bacteria. It is the most important group of microorganisms that are used in food fermentation.
Lactic acid bacteria help in the conversion of milk into curd by coagulating milk proteins. At a suitable temperature, the curd is added as a starter (inoculum) in fresh milk and then bacteria start the conversion of milk into curd. Lactic acid bacteria help in lactose digestion and help in controlling disease-causing microbes in the stomach.
