The ratio of the volume of carbon dioxide produced to the volume of oxygen consumed in respiration over a period of time is called respiratory quotient. The R.Q. for carbohydrate is unity. R.Q. will be less than one when the substrate is either fat or protein. R.Q. will be more than one when organic acids are broken down as respiratory substrate under aerobic conditions.
