In potato osmometer, the potato scoop is filled with sugar solution and is kept in a beaker containing water. Now, due to osmosis which is the net movement of water molecules from a region of their higher concentration to a region where their concentration is low through a differentially permeable membrane, water comes inside the potato. Since a chemical gradient is developed along which there is physical movement of water, it is a physico- chemical process.
