Gelatin is a translucent, colourless, brittle and tasteless solid substance. It is used as a gelling agent in ice-creams i.e., when it is added to the aqueous mixture, it increases its viscosity by dissolving in the liquid phase as a colloid mixture thereby thickening it and increasing its stability.
