The bile salts are produced in liver and are stored in the gallbladder. Bile salts like sodium glycocholate and sodium taurocholate reduce the surface tension of large fat globules and break them into fine-minute fat droplets. This process is known as the emulsification of fat and it happens in the small intestine.
