Cauliflower (known as phulgobhi-Brassica oleracea var. botrytis) is most popular or aristocratic of all brassicas. Besides being cooked - as vegetable, cauliflowers are made used into soups and used also pickled. Brassica oleracea var capitata (cabbage) may be eaten raw or cooked. Red cabbage are used chiefly for pickeling. Brassica campestris (Brown sarson) grown as an oil seed crop. The pungency of oil is due to the presence of essential oil.
