A fatty acid molecule is an unbranched chain of carbon atoms with a carboxyl $(-COOH)$ group at one end. They are of two types - saturated (with single bonded carbons) and unsaturated with double bonded carbon atoms). Unsaturated fatty acids, e.g., oleic acid, linoleic, linolenic acid, etc., remain liquid at room temperature as their melting points are quite low.
