The microbe used for the commercial production of ethanol is Saccharomyces cerevisiae. It is a fungus. It is also known as 'yeast'. Clostridium butylicum, Aspergillus niger and Lactobacillus are acid producers, responsible for the production of butyric acid, citric acid and lactic acid, respectively.
