Q. The conversion of maltose to glucose is possible by the enzyme:

Surface Chemistry

Solution:

Maltose also known as malt sugar is reducing sugar and gives two molecules of $\alpha- D$ - glucose upon hydrolysis. In it two glucose molecules are joined by $\alpha$ - glycosidic linkage between $G$ of the first unit and $C$ in the second unit.

Maltose $\xrightarrow{\text{Maltase}} \alpha-D-$ glucose $+\alpha-D-$ glucose

whereas; $C_{6}H_{12}O_{6} \xrightarrow[{(0000)}] {\text{Zymase}} 2C_{2}H_{5}OH+2CO_{2}$

Lactose is present in milk of animals

Lactose $\xrightarrow{\text{Lactase}} D$ - glucose + D - galactose

Starch can be digested by use of diastase.
