Q. Starch is converted to ethanol by fermentation. The sequence of enzymes used are

Solution:

The manufacture of ethyI alcohol from starch contains the following steps
(i) Hydroiysis of starch
$2(C_6H_{10}O_5)n + nH_2O \xrightarrow{50- 60^{\circ}}$ Diatease $\underset{\text{maltase}}{nC_{12}H_{22}O_{11}}$ This step is called saccharification.
(ii) Fermentation
$\underset{\text{maltase}}{nC_{12}H_{22}O_{11}} + H_2O \xrightarrow[\text{teast}]{\text{Maltase}} \underset{\text{glucose}}{2C_6H_{12}O_6} \xrightarrow{\text{Zymase yeast}} \underset{\text{ethanol}}{2C_2H_5OH} + 2CO_2$
