Agar-agar is commercially extracted from the red algae or rhodophyta. Cell wall of there algae possess cellulose pectic compounds and certain-muco -polysaccharide called phycocollids. Red algae like -Gelidium, Gracillatia, Ceramium, Chondrus produces agar-agar of commercial use.
