The chemicals which are used to protect food from microbes action, $ i.e., $ which arrest the process of fermentation, acidification and any other decomposition of food are known as food preservatives. Table salt. sugar, vegetable oil. vineger, sodium benzoate $ (C_{6}H_{6}COONa), $ sodium metabisulphate $ (Na_{2}S_{2}O_{5}), $ vitamin $E$ etc. are food preservatives.
