Enzyme 'renin' is secreted by cells of stomach. This enzyme is secreted only in mammals as an inactive proenzyme called prorenin. $ HCl $ activates it into active, renin. It changes the soluble casein protein in milk into insoluble, semifluid calcium paracaseinate. This is termed or curdling of milk.
