Haryana PMTHaryana PMT 2004

Solution:

When oxygen is not available, yeast or some other microbes respire anaerobically. In case of anaerobic respiration the value of respiratory quotient is much more than unity as oxygen is not utilized, e.g.,
$\underset{\text { Glucose }}{ C _{6} H _{12} O _{6}} \xrightarrow[{\text{ethylalcohol}}]{\text { zymase }} \underset{\text{ethylalcohol}}{3 C _{2} H _{5} OH} +2 CO _{2}+$ energy
$RQ =\frac{2 CO _{2}}{ O _{2}}=2$ or $\alpha$
