"Plant breeding program designed to increase the vitamins, minerals, higher protein and healthier fat is called biofortification." Indian Agricultural Research Institute (IARI), New Delhi, has also developed many vegetable crops that are rich in minerals and vitamins. For example, vitamin A enriched carrots, pumpkin, spinach, vitamin С enriched bitter gourd, bathua, tomato, mustard, cal­cium and iron-enriched spinach and bathua; and protein-enriched beans.
