When fat is heated in presence of $KHSO _{4}$ (dehydrating agent) the glycerol portion of the molecule is dehydrated and form unsaturated aldehyde $CH _{2}= CH - CHO$ (acrolein), a bed smelling compound. It is the test for fat.
