Proteins are polypeptides. They are linear chains of amino acids linked by peptide bonds. Amino acids join to form polypeptides. The carboxyl group of one molecule reacts with the amino group of the other molecule, releasing a molecule of water. One of the participating amino acid loses a hydroxyl (-OH) group from its carboxylic acid group (-COOH), while the other loses a hydrogen atom from its amine group. This leaves a carbon atom of the first amino acid free to bond with the nitrogen atom of the second and resulting link formed is called a peptide bond.
