Enzymes are sensitive to heat. At freezing temperature enzymes stop their activity. As the temperature increases, rate of enzyme action also increases. Optimum temperature is the temperature at which the enzyme works at its best. Optimum temperature for enzyme activity is 25-35°C. Above 40°C the enzymes are inactivated and their activity decreases.
