Lactobacillus is a genus of Gram-positve, facultative, anaerobic or microaerophilic bacteria. Lactic Acid Bacteria (LAB) grow in milk and convert it to curd.
During growth, LAB produce acids that coagulate and partially digest the milk proteins.
